「止まり木」という意味の名詞ですが、そこから「座る・（建物などを）高い場所に建てる」という動詞にもなります。

ライティングでは次のように、動詞の方が使いやすいかと思います。

Some students prefer to perch near the back of the classroom because they feel less nervous during difficult lectures and discussions.

一部の学生は、難しい授業や議論の際に緊張しにくいため、教室の後ろのほうに座ることを好む。

Ancient castles were often perched on steep mountains because those positions made it difficult for enemies to attack.

古代の城は急な山の上に建てられることが多く、その位置は敵の攻撃を困難にした。

sitの代わりに使えそうですね。
