On October 19, 17 first-year students of Akkeshi Shoyo High School had a practical training session of making canned saury, which is a local product.
The canned saury is a popular product sold only at the school festival in July every year.
This year's festival was cancelled due to the corona crisis and\]
the product could not be sold to the general public, but it was served to school lunches at the elementary school and was very popular.
This year, due to the record-breaking poor catch of saury, we prepared 300 kiloliters of frozen saury that was caught last year, and plan to produce a total of 1,200 units of two kinds of canned saury products, one boiled in water and the other seasoned with the recipe that has been handed down since the days of the predecessor, Akkeshi Suisan High School.
The teacher in charge of this project said, "The seasoning is soy sauce based and sweetened, and we are improving it to suit the taste of students as well".
The first day of the training was 60 kiloliters of canned saury.
The students removed the head and organs of the saury, placed the meat on the wooden frame with 5cm intervals, cut it into pieces of the same size, and then dipped it in 5% salt water.
Six to eight pieces of the fish are stuffed in a can in a balanced manner, and water is added to make a total of 210 cwt.
The cans are sealed in a vacuum by a seamer and then heated and sterilized for 90 minutes at 115 degrees in a sterilization oven to complete the process.
